pumpkin bread



was in the mood for fall-ish sweets...
decorating and all,
so i made this saturday morning
while having the girls over.
pumpkin bread


1 1/2 c. sugar
1/2 c. veg. oil
2 eggs
8 oz. pumpkin puree (canned pumpkin, or fresh if you don't have two little kids at your feet)
1/4 c. sour cream
1 1/2 c. flour
1/2 t. cinnamon
1/2 t. nutmeg
1/2 t. baking soda
pinch salt
1/2 t. baking powder

Preheat oven to 350. Butter and dust with flour your loaf pan.

Combine dry ingredients (except sugar) and set aside.

In mixer, combine sugar and oil. Add eggs one at a time.
Add pumpkin and sour cream. Mix well.

Add in dry ingredients.

Pour into pan, smooth out. Cook until its done...about 30 minutes I think. Sorry I am the worst at remembering times. I just turn the timer on in increments so its constantly beeping throughout the house. Its really just good exercise....up and down the stairs.

Topping (if your choose)...(I have a thing for toppings)

1/4 c. granulated sugar
1/4 c. brown sugar
1/4 c. crushed pecans
1/2 c. rolled oats
1/4 t. cinnamon
(and ruby added some dried cranberries into ours)

Mix and sprinkle on top before baking bread. Kinda messy, but prettier than naked bread. You could always make some spiced whip cream and thow a bit of creme fraiche in there to top it off if you are having lovely friends over.
